We are expanding our operations and are looking for an experienced Senior Food Technologist & Quality Assurance Manager to lead food quality, recipe standardization, research and development, food safety, and operational excellence across Poet Restaurant operations.

Position Summary

We are seeking a highly skilled and experienced professional who can standardize recipes, maintain consistent dish quality and portion sizes, strengthen food safety systems, lead research and development, and continuously improve kitchen operations through innovation, quality assurance, and team training.

Responsibilities

• Develop, standardize, and continuously improve recipes across all Poet Restaurant outlets to ensure consistency in taste and presentation.
• Define and enforce standard portion sizes for dishes, conducting portion control audits to reduce food wastage and improve profitability.
• Monitor kitchen operations closely to ensure adherence to approved recipes, cooking methods, and presentation standards.
• Conduct thorough quality inspections of raw materials, in-process preparations, and finished products to guarantee top-quality output.
• Collaborate with chefs and kitchen teams to optimize workflows, enhance food quality, and increase operational efficiency.
• Develop, implement, and maintain food safety and quality assurance management systems in compliance with Punjab Food Authority regulations and international standards like HACCP, GMP, and GHP.
• Lead regular hygiene, sanitation, and food safety audits, ensuring timely corrective actions and continuous compliance.
• Serve as the primary liaison with food safety regulatory bodies during inspections and audits.
• Drive research and development initiatives for new menu items by investigating food trends, customer preferences, and competitor offerings using digital platforms and social media.
• Evaluate ingredient suppliers and food products for quality and value, ensuring consistent supply chain standards.
• Enhance product stability, shelf life, and sensory qualities through applied food science techniques.
• Plan and execute comprehensive training programs for kitchen staff on recipe compliance, portion control, hygiene, and quality standards.
• Conduct refresher training sessions and assess kitchen team performance to maintain high standards of food safety and quality.
• Develop and update standard operating procedures (SOPs) covering food preparation, storage, handling, and quality management.
• Maintain accurate and detailed quality records, audit reports, compliance documentation, and management reports using Microsoft Word and Excel.
• Prepare analytical dashboards and professional reports summarizing quality performance, observations, improvement opportunities, and action plans for senior management.
• Lead and motivate a team of 25 persons, promoting teamwork and continuous quality improvement throughout kitchen and food production operations.
• Manage multiple projects independently to meet deadlines in a fast-paced restaurant environment while sustaining a focus on excellence and innovation.
